16 ounces Penne Rigate
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
1 can (28-ounces) whole peeled tomatoes, undrained
1 can (6-ounces) black olives, chopped
2 tablespoon chopped fresh basil or 1 teaspoon dried basil
Salt to taste
1/2 cup freshly grated Parmesan cheese
Recipe
Prepare pasta according to package directions.
In a large skillet, heat oil over medium-high heat. Stirring frequently, cook garlic and red pepper until garlic is golden brown, about 3 minutes.
Chop tomatoes and add to skillet. Heat to boiling; reduce heat. Cover and simmer about 10 minutes, stirring occasionally.
Combine hot pasta with sauce with half of the Parmesan cheese and toss until evenly coated. Sprinkle with remaining cheese.
