Prosciutto Rollatini

6 thin slices prosciutto or smoked ham, about 9 1/2 x 3 inches
3 tablespoons toasted onion mustard, or flavored mustard of choice
Freshly ground black pepper
2 ounces mozzarella, cut into about 24 2 x 1/4 inch strips
1/4 cup matchstick strips red bell pepper, each about 2 x 1/8 inches
1/4 cup matchstick strips fresh fennel, each about 2 x 1/8 inches, plus fresh fennel
fronds for garnish
1. Place prosciutto slices on work surface; cut each in half lengthwise. Spread
each strip with 3/4 teaspoon mustard, to cover; generously sprinkle with pepper.
2. At narrowest end of prosciutto, place one strip each mozzarella, red pepper,
and fennel. Roll up tightly to contain. Garnish with small frond fennel. Serve
immediately, or cover with plastic wrap and refrigerate up to 3 hours. If
refrigerated, let stand at room temperature 10 minutes before serving.
