Ricotta Cheese Pie

For crust:
3/4 cup flour
3 tablespoons sugar
6 tablespoons butter
1 egg yolk
1/4 teaspoon vanilla
Filling:
3 cups ricotta cheese
3 egg yolks
1/2 cups plus 2 tablespoons sugar
zest of one lemon
3 eggs
Recipe
For crust: Combine flour, sugar. Cut in butter until crumbly. Stir in egg yolk and vanilla. Knead dough slightly to form a ball. Roll dough out to fit into a 10" round pie pan. Bake in 400 °F oven for about 7 minutes or until golden brown. Let cool before filling.
Stir together by hand, ricotta, egg yolks, sugar and lemon zest. Pour into baked pie shell and smooth the top. Bake at 350°F for 30 to 40 minutes or until knife inserted off center comes out clean.
