    1 pound whole milk ricotta
    2 tablespoons Italian roasted espresso
    1/2 cup sugar
    1/3 cup rum

    Beat ricotta until light and press through a fine sieve. Add the coffee and sugar and mix well. Add the rum and blend thoroughly. Pour into a serving dish and chill for several hours. Serves 4.
