    4 slices raw Parma ham, chopped
    2 tbsp butter
    1 small onion finely chopped
    1 box frozen peas
    2 litre instant meat stock
    6 fistfuls of Arborio rice
    salt and pepper
    copped parsley
    grated Parmesan cheese

    Recipe



    If you cannot find Arborio rice use another Italian polished rice.

    Brown the onion and raw ham in the butter in a large saucepan. When the onion is golden add the peas with a ladleful on stock. Cook for a few minutes.
    Heat the remaining stock to the boil and add it to the sauce pan, then add the rice that must cook for 20 minutes. Taste it to make sure it does not overcook.
    All the stock will have been absorbed and the risotto will be "all'onda", creamy and with a slight movement like a wave. Remove from heat and add the parsley and a generous grating of Parmesan cheese. Serve hot.
