    1 medium, sliced red onion
    5 cloves, diced garlic
    1 green peppers, medium spicy such as Hungarian Wax or Poblano sliced
    3 Tbsp or more olive oil, extra virgin for drizzling
    2 lb green beans, Romano or Roma, washed and picked
    2 lb, cut into chunks fresh plum tomatoes
    1 c chopped basil
    1 pinch, to taste salt
    1 pinch, to taste black pepper

    In a large covered pan, big enough to hold all ingredients, sauté the onion, pepper, and garlic in olive oil until it is soft. Add the green beans and tomatoes. Turn down the heat and cover - simmer about 10 minutes. Uncover and add the basil, salt and pepper. Simmer another 10 minutes until the liquid reduces and the beans are soft. Serve hot or cold and drizzle with extra virgin olive oil before serving.
