    ½ cup lukewarm water
    ½ cup lukewarm milk
    2 packages yeast
    3 cups flour + flour for working
    2 tablespoons unsalted butter at room temperature
    1-1/2 teaspoons sugar
    1-tablespoon salt
    8 ounces Scamorza cheese roughly cut
    3 ounces pancetta

    Recipe



    1. Place the milk and water in a bowl and add the yeast and let stand 10 minutes.

    2. Combine the flour, butter, sugar and salt in a processor.

    3. Add the yeast mixture and continue to process until dough forms.

    4. Turn the dough onto a floured work surface and kneed until smooth (about 5 minutes).

    5. Place the dough into a large bowl that was lightly floured, cover tightly with plastic wrap. Let stand until doubled one hour.

    6. Roughly chop the Scamorza and pancetta.

    7. Turn the raised dough onto your work service and punch it down.

    8. Now roll it out to an 8X12 sheet.

    9. Evenly cover the dough with the filling mixture.

    10. From the long side, roll the dough to enclose the filling.

    11. Form a circle with the dough and pinch the ends together.

    12. Let rise again for 20 minutes.

    13. Preheat oven to 400-degrees.

    14. Flour a baking pan.

    15. Bake until lightly brown (20 minutes).

    16. Remove from the oven and let cool before serving.
