    8 ounces penne pasta
    1 1/2 ounces (about 1/2 cup) salami, thinly sliced into strips
    2 ounces (about 1/2 cup) fresh mozzarella cheese, diced
    1 roasted red pepper, cut into thin strips (tip for roasting peppers above)
    1/2 cup Greek (ripe) olives, pitted and sliced
    1/4 cup fresh parsley, chopped

    Vinaigrette:
    1/4 cup red wine vinegar
    1 garlic clove, minced
    pinch sea salt
    1/4 cup extra-virgin olive oil

    Recipe



    Cook the pasta in a large pan of boiling, salted water. Drain and rinse well in cold water. Drain again and pour pasta into a large serving bowl. Add the salami, mozzarella, roasted red pepper, olives, and parsley.

    Vinaigrette: In a small bowl, combine the vinegar, garlic and salt. Whisk in the olive oil.
    Pour the vinaigrette over the pasta salad and toss gently to coat. Serves 6 to 8.
