    Spaghetti with Zucchini Sauce

    8 ounces of spaghetti
    1 medium zucchini, shredded
    2 scallions, thinly sliced
    2 tablespoons of finely chopped parsley
    1/4 cup of vegetable oil
    1 teaspoon of salt
    1/4 teaspoon of garlic powder
    1/4 teaspoon of oregano leaves, crushed
    Dash of cayenne pepper

    Cook the spaghetti as package label directs. In a large serving bowl, combine the zucchini, scallions, parsley, oil and seasonings. After the spaghetti has cooked, drain in colander. Add hot spaghetti to zucchini mixture, toss lightly. Serve immediately. Makes 3 to 4 servings.
