1 pound beef cut into 4 thin slices, trim well
3 tablespoons flour
3 tablespoons olive oil
3 cloves garlic, peeled and crushed
14 ounce can tomatoes passed through a food mill
2 tablespoons basil, chopped
1-tablespoon parsley, chopped
Salt and pepper to taste
Recipe
Heat 2 tablespoons of the oil in a pan.
Add the garlic and cook till golden.
Brown the steaks on both sides.
Remove the meat and set aside.
Add the rest of the oil, tomatoes, herbs, salt and pepper.
Cook over a medium heat for 15 minutes.
Add the meat to the mixture making sure to that the sauce covers the meat.
Cook five more minutes and serve.
