    4 veal escalopes or cutlets cut in half
    salt
    3 garlic cloves finely chopped
    1 cup fresh parsley chopped
    8 celery leaves chopped
    3/4 cup olive oil
    6 tbspn white wine

    For tomato sauce:
    4 tbspn olive oil
    1/2 onion finely chopped
    2 fresh red hot chillies finely chopped
    2 14oz can chopped tomatoes
    fresh basil leaves roughly torn
    fresh parsley chopped
    salt and groun black pepper

    Recipe



    To make tomato sauce, heat olive oil and sautee onion and chillies for about 4 minutes. add chopped tomatoes and cook for about 20 minutes. remove from heat and add basil, parsley and season with salt and pepper. set aside. spread out slices of veal on flat surface. sprinkle salt, garlic, parsley, celery leaves, on each slice of meat. roll up and sicure each with a wooden toothpick. heat the olive oil in a frying pan and sautee the onion. add veal rolls and cook for about 5 minutes, browing lightly on all sides. add wine and tomato sauce. cover and leave to cook for 10 minutes. serve veal rolls covered with sauce and garnish with parsley.
