    That's A Spicy Spicy Spaghetti Sauce

    2 lbs Italian mild sausage, cut in bite-sized pieces
    Olive oil
    1 large onion, minced
    6 - 8 cloves garlic, pressed
    6 cans (28-oz each) whole tomatoes
    1 green bell pepper, minced
    1/4 cup Parmesan cheese, grated
    1/4 tsp cayenne pepper
    1 1/2 tsp oregano
    1 tsp basil
    1 tsp paprika
    1/2 tsp Italian seasoning
    1 tsp thyme
    1/2 tsp salt
    1/4 tsp ground black pepper
    1 Tbsp sugar
    1 cup dry red wine
    1 small can tomato paste (optional)

    In a skillet brown the sausage on all sides; drain.

    In a large (at least 12 quart) pot heat 2 Tbsp olive oil. Add the onion and garlic; saute until clear. Add drained sausage.

    Coarsely chop the tomatoes in a blender or food processor; add to sausage/onion mixture. Bring to a boil and reduce heat to simmer.

    Add all remaining ingredients. Simmer uncovered for 6-8 hours or until thick, stirring occasionally. Watch for burning!
