Tomato Caprese Salad

5 thin slices bread, trimmed to 1-1/2-by-2-1/2-inch rectangles, 1 rectangle cut diagonally in half
5 teaspoons extra virgin olive oil, plus extra for brushing the bread
3 ounces fresh goat cheese
1 tablespoon chopped, fresh basil
Freshly ground black pepper, to taste
2 medium tomatoes, cored and sliced as thin as possible into rounds
Kosher or coarse sea salt, to taste
3 large fresh basil leaves, plus several smaller leaves for garnish
1/4 cup loosely packed frisee, cut into 1- to 1-1/2-inch pieces
To prepare toast: Preheat oven to 400 F. Brush the bread on both sides with olive oil, place on a baking sheet and toast in the oven until well browned on both sides, about 5 minutes. Set aside.
To prepare cheese: In a small bowl, stir together goat cheese, 2 teaspoons of the olive oil, the chopped basil and 1/8 teaspoon pepper until well blended.
To prepare tomatoes: Lay a 12-inch square of plastic wrap on a work surface. Drizzle 1-1/2 teaspoons of the oil over it and brush or smear with your fingers to make a thin coating. Arrange the tomato slices in an overlapping spiral fashion to make a 9-inch round. Drizzle the remaining 1-1/2 teaspoons olive oil on top. Cover with a second sheet of plastic the same size as the first.
Using a rolling pin, firmly tap and roll over the tomatoes to gently flatten them into a very thin disk. Peel off the top layer of plastic wrap and overturn a 12-inch serving plate on top of the tomatoes. Fold the corners of the plastic wrap over the bottom of the plate to secure it and then carefully flip the serving plate over so that the tomatoes are now centered on the plate. Peel off the plastic wrap. Sprinkle the tomatoes with salt and pepper. Wipe the edges of the plate clean.
To finish the dish: Spoon the cheese into a mound in the center of the tomatoes. Enclose the cheese with the 4 rectangular pieces of toast to make the walls of the "house." Stick 1 triangular piece, wide end down, in the center of the cheese, so that it sticks up through middle of the house. Place the second triangle on top to make a "roof." Place the large basil leaves on the roof. Scatter the frisee and the smaller basil leaves around the tomatoes and serve.
