    For the Marinara Sauce:
    1/4 cup extra virgin olive oil
    2/3 cup minced onion
    3 tablespoons minced garlic
    16 ounces plum tomatoes - canned
    1/4 cup Chianti
    2/3 cup fresh basil - minced
    3 tablespoons fresh oregano - minced
    4 teaspoons salt
    1/2 teaspoon ground black pepper
    1/2 cup tomato paste

    For the Pasta:
    8 sausage links
    1 pound pasta
    2 tablespoons olive oil
    1/2 medium yellow onion - thinly sliced
    1 medium red bell pepper - thinly sliced
    2 teaspoons salt
    1/2 teaspoon freshly ground black pepper
    1/2 cup Parmesan cheese - grated

    Recipe



    For the Marinara Sauce:
    In a nonstick saucepan, heat olive oil over medium heat until hot. Add onion and garlic. Cook until onion is translucent (5 minutes).

    Stir in the tomatoes, wine, basil, oregano, salt, and pepper. Bring to a simmer, then reduce the heat to low and cook, stirring occasionally, until thick (20 minutes). Stir n the tomato paste and continue cooking for 10 minutes. Remove from heat and set aside.

    For the Pasta:
    Preheat broiler. Broil sausage until fully cooked and brown (12 minutes). Allow to cool. Refrigerate until chilled. Cut each link at a 45 degree angle into 1/4 inch thick slices. Set aside or refrigerate.

    In a a large pot of boiling water, cook pasta according to manufacturer's instructions. While past is cooking, heat olive oil in a large skillet over medium heat. Add the onions and peppers and cook until vegetables become limp. Add the sausage slices and cook for one more minute. Stir in the Marinara sauce, salt and pepper. Bring sauce to a simmer and stir in Parmesan cheese. Serve over cooked pasta.
