    1lb 11oz peeled tomatoes
    1 large chopped potato
    6 fl oz. white wine
    41/2 lb. mixed fish: sea bream, lobster, langoustine and mussels. You can also use: squid, tiny octopus, prawns, and any white fish cut up.
    1 lb clams
    3 1/2 lb mussels
    1 bunch of parsley chopped1 large onion
    bunch of herbs: basil, oregano, black pepper.
    2-3 cloves of garlic
    3-4 tbspoon olive oil

    Clean, scale and cut fish into fillets. Saute' onion and garlic in olive oil. When golden add tomatoes, potatoes, herbs, pepper, wine and simmer for 15 minutes. Add fish starting with one which needs more cooking. start with octopus and add rest at intervals. Add little water or wine if necessary. Meanwhile steam open clams and mussels in a pan with a drop of water and the lid on, the strain and add to soup with all their juice. Cook for further 5 minutes. Serve in large terrine, sprinkled with parsley and accompanied with chunks of toasted bread, or put bread in bowl.
