    Baked Oysters with Bread Crumbs

    2 Tbsp. butter
    1 tsp. garlic, finely chopped
    2 Tbsp. parsley, finely chopped
    3 Tbsp. Parmesan cheese, grated
    2 Tbsp. butter, cut in pieces
    1 cup fresh bread crumbs (3 slices Italian bread)
    2 dozen fresh oysters shucked (may use frozen)

    In a heavy skillet melt 2 tablespoons of butter over moderate heat. When foam subsides, add bread crumbs, and garlic. Toss 2-3 minutes until crisp and golden. Stir in parsley and grated cheese. Sprinkle crumbs on oysters. Dot the top with tiny bits of butter. Bake in shallow pan, large enough to hold oysters in a single layer. Preheat oven 450 degrees. Bake oysters in top third of oven for 12-15 minutes until the crumbs are golden. Juices in the dish should be bubbling. Serve at once as and antipasto or first course.
