3 eggs, beaten
1 Tbsp. parsley
salt/pepper
2 tsp. garlic, minced
1 bunch of cardoons
2 cups bread crumbs
extra virgin olive oil for frying
Recipe
Trim thistle-like leaves from cardoon, wash and scrape with a potato peeler to remove the grainy outer skin. Cut cardoon in pieces about 4" long. Boil in water until tender. Drain and pat dry with paper towel. Combine eggs, parsley, garlic, salt and pepper in bowl. Dip cardoon pieces in egg, then in bread crumbs. Fry in olive oil until golden brown.
