Marinated Mozzarella with Herbs

1 pound fresh mozzarella cheese, sliced or cut into cubes
2 tablespoons shredded basil leaves
1 tablespoon chopped fresh Italian parsley
1/4 cup extra virgin olive oil
salt and pepper (to taste)
1/2 teaspoon red pepper flakes (optional)
grilled bread slices (optional, to serve)
Recipe
Overlap cheese slices in a large shallow dish (if cubed use bowl).
Top with remaining ingredients, turning cheese to coat. Cover tightly and refrigerate at least 2 hours.
TO SERVE:
Turn on to serving platter. Serve with grilled bread or pick up cubes with food picks as an appetizer.
