Olive Toast Squares

1/2 cup pitted black olives, chopped
9 slices thinly sliced white bread
1 1/2 Tbsp. extra virgin olive oil
3/4 tsp. dried thyme
Recipe
Cut the olives into thin slices. Cut the crusts off the bread, and brush the bread with olive oil. Sprinkle the thyme onto the bread and cut into 1 1/2 inch squares. Lightly toast the bread squares under the broiler. Remove from the broiler. Spread the olives over the toast squares, and serve immediately. Makes about 3 dozen squares.
