Orzo with Ricotta

2 C. orzo pasta
1/4 C. olive oil
2 garlic cloves, chopped
2 T. chopped fresh basil or rosemary (optional)
1 C. ricotta cheese, prefrably fresh
Salt and freshly ground pepper to taste Recipe
Bring a large pot of lightly salted water to a boil over high heat. Add the orzo and cook, stirring occasionally,
until al dente, about 9 minutes. drain well.
In a large skillet, heat the oil and garlic (and basil, if using it) over medium heat, stirring occasionally, until the garlic is tender but not browned, about 3 minutes.
Add the orzo and mix well. Stir in the ricotta, then season with salt and pepper. Serve hot.
Makes 4 to 6 servings.
