Roasted Peppers w/Sausage in Pita Bread

1 1/2 pounds sweet Italian sausage
three 7 1/4 ounce jars sweet roasted peppers
2 Tbsp. unsalted butter
pinch of oregano
pinch of parsley
freshly ground pepper to taste
12 mini pita breads, cut in half
Recipe
Panboil the sausages for about 5 minutes. Drain the peppers and finely chop them in the food processor. Melt the butter in a skillet and add the chopped peppers. Finely chop the sausages in the food processor, and mix them with the peppers in the pan. Add the oregano, parsley, and pepper and cook approximately 12 to 15 minutes. Serve in small pita bread pockets, or puree further and use as a spread on small rounds of French bread or on endive leaves. Makes approximately 24 hors d'oeuvres
