    2 large eggplant, Slice lengthways, skin on (optional)
    2lbs Mild Italian Sausage
    1 large onion, chopped
    2 jars any spaghetti sauce
    Italian Bread Crumbs
    2 cups shredded mozzarella cheese
    Between 1/2 - 1 cup parmesan cheese (as desired)
    olive oil

    Recipe



    Add eggplant to boiling water in saucepan and simmer for about 6 mins. Drain eggplant and cool whilst assembling sauce.

    Brown Italian sausage and onions in pan. Add spaghetti sauce and simmer for about 15 mins. Remove from heat and add 3/4 cup of Italian bread crumbs and 1 cup of mozzarella cheese. Stir till blended.

    Put a little sauce in bottom of lasagne style dish and then layer eggplant in single layer. Drizzle with a little olive oil. Cover eggplant with remaining sauce. Sprinkle remaining mozzerella and parmesan cheese. You can freeze at this point or bake in preheated over (350o) for 25-30mins.
