Son's of Italy Cheese Bread

1 package dry yeast
3/4 cup warm water
1 Tbsp. sugar
1/2 cup plus 1 tablespoon EXTRA VIRGIN OLIVE OIL
4 cups unbleached white flour
1/8 tsp. salt
4 eggs, beaten-save 1 tablespoon of this to brush top
1/3 pound muenster cheese, sliced
Recipe
1. Add yeast to warm water, add sugar. Let sit for 5 minutes until bubbly. Add olive oil (1/2 cup) to yeast mixture and flour with salt added. Mix well, add more warm water if too stiff.
2. Knead dough for 3 minutes.
3. Oil 9 x 12 inch pan. Pat dough in pan.
4. Press down the muenster cheese on top. Brush with the 1 tablespoon of egg, saved.
5. Preheat oven to 350 degrees. Bake for 25 minutes. Top should be golden brown and a hollow sound when tapped on top. Cool on wire rack. Serve warm. Cut into 12 squares. Freezes well. Store in refirgerator. Serve with a salad, either tossed or fruit salad. Good for dipping in Extra Virgin Olive Oil and garlic too!
