Three-Fruit Marmalade

2 grapefruits
2 temple oranges
4 lemons
6 pts. water
6 lbs. sugar
Recipe
Wash fruit thoroughly, remove the rind, and cut into shreds. Remove all pithy white membrane from the fruit, cut up fruit into chunks, and tie all membrane and seeds in a cheesecloth.
Combine the shredded rind, cut-up fruit, and cheesecloth package in a large pot, add the water, and let soak overnight.
Bring liquid to the boil, reduce heat, cover, and simmer mixture for 1 1/2 hours or till peel is just soft. Remove cheesecloth package and, when cool enought to handle, squeeze its juices back into the pot. Add sugar to the pot, stir till well dissolved, brting mixture to the boil, and boil rapidly for 5-10 minutes or till desired consistency, tested on a chilled plate.
Pour marmalade into hot sterilized jars, seal, and store in a cool area.
