    6 cups raw zucchini, peeled and finely shredded (or choppedin food processor)
    6 cups sugar
    1/2 cup lemon juice
    1 cup crushed pineapple and juice
    6 oz. package orange gelatin

    Drain zucchini, then boil until clear (about 6 minutes). Add sugar, lemon juice, pineapple and juice. Boil 6 minutes. Remove from heat and add orange gelatin. Stir until dissolved. Pour into clean jars or plastic containers with tight lids. Refrigerate.
