    Zucchini Lime Marmalade

    4 cups zucchini, coarsely shredded
    2 cups water
    ½ cup fresh lime juice
    1 pkg Certo powder
    5 cups sugar
    3 tbsp lime peel, grated

    Recipe



    In large pot, combine zucchini, water and lime juice. Bring to a boil and boil gently for 10 minutes. Stir in Certo; return to boil. Stir in sugar and lime peel; return to hard rolling boil that cannot be stirred down. Boil, stirring constantly for 1 minute. Remove from heat. Stir for 5 minutes. Ladle into hot sterilized jelly glasses to within ½ inch of top. Wipe edges with damp cloth; pour 1/8 inch melted paraffin wax over jam. Let stand overnight or until cold. Pour another thin layer of wax over jam, rotating jar to seal the edges.
