Heavenly Brownies, 2 Grams Of Fat Apiece

1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup unsweetened plain applesauce
1 large egg
6 large egg whites
2 teaspoons vanilla extract
2 cups granulated sugar
3 tablespoons finely chopped pecans (about 1 ounce)
Recipe
Preheat oven to 350 degrees F, with a rack in center. Lightly spray sides and bottom of 9x13 inch baking pan with nonstick cooking spray. Set aside.
Sift together flour, cocoa powder, baking powder and salt. Set aside.
In a large mixing bowl, whisk together applesauce, egg, egg whites and vanilla until thoroughly combined. Add sugar and whisk until sugar is dissolved. Add dry ingredients and whisk until just moistened, 20 to 25 seconds. Do not overmix, or brownies will be tough and rubbbery.
Pour batter evenly into prepared pans and sprinkle pecans over top. Bake for 30 to 35 minutes, or until brownies pull away from sides of pan.
Cool. Cut into 18 squares. Store in pan, tightly covered with foil. (refrigerate if not eating within 1 to 2 days.
