    Light Frozen Peppermint Cheesecake

    1-1/4 Cups chocolate wafer crumbs, about 24
    1/4 C. sugar
    2 Tbsp butter melted
    2 Tbsp water
    1 8-oz pkg nonfat cream cheese, softened
    1 14-oz can fat free sweetened condensed milk
    3/4 Cup crushed hard peppermint candy (27 mints)
    red food coloring (opt)
    1 12 oz container frozen nondairy light whipped topping, thawed

    Recipe



    Combine cookie crumbs. butter, sugar, water
    Press into bottom and sides of 9" springform pan. Set aside
    In large bowl beat cream cheese until smooth
    Gradually add & beat in sweet condensed milk
    Stir in crushed candy and food coloring, if desired
    Fold in whipped topping
    Pour peppermint mixture into prepared pan
    Cover, freeze for 6 hours or until firm
    Return leftovers to freezer
    Serves 12
