Lite and Easy Chocolate Cake

CAKE
2 Tbsp. instant coffee granules
1/2 boiling water
2 1/4 all-purpose flour
2 c granulated sugar
3/4 unsweetened cocoa powder, sifted
1 1/2 tsp each baking powder and baking soda
1 tsp salt
1 C milk
3/4 plain yogurt
2 eggs lightly beaten
1/4 vegetable oil
2 tsp vanilla
CHOCOLATE ICING
1/2 cup granulated sugar
1/2 cup unsweetened cocoa powder
1/2 cup milk
1/2 tsp vanilla
Recipe
Preheat oven to 350 degrees (180 C)
Dissolve coffee granules in boiling water let cool. Lightly grease or spray 13x9 inch (3L) baking dish with nonstick cooking spray; line bottom with waxed paper
In large bowl mix together flour, sugar, cocoa, baking powder, baking soda and salt. Whisk Milk with yogurt until blended; add to flour mixture along with eggs, oil vanilla and coffee mixture: beat at medium speed for 2 minutes
Pour into prepared pan. Bake for 40 to 45 min or until top springs back when lightly touched. Let cool in pan on rack for 20 minutes. Remove from pan and cool completely on rack
CHOCOLATE ICING: In small sauce pan, mix sugar with cocoa; whisk in milk until smooth. Over medium heat, bring to a simmer, stirring constantly. Continue stirring and cook for 2 minute Remove from heat. Stir in vanilla. Let cool for 2 hours (icing thickens upon cooling). Spread over top of cake
HEALTHY EATING TIP Cocoa has a rich chocolate flavour, yet it is lower in fat then chocolate. Preparation time:20 minutes. Baking time 40 minutes. Cooling Time 2 hours
