8 oz. fat-free cream cheese
2 C low fat, fat free or skim milk
1 small pkg. lemon instant pudding mix, pre-sweetened
Soften cream cheese and beat until very soft. Blend in 1/2 cup milk until smooth
Add remaining milk and the pudding mix. Beat slowly for one minute. (Or you can use a blender or food processor for this whole process)
Pour into a fat-free crumb crust, if desired, or pour into small, individual molds. Chill at least one hour, or until set.
Try other flavors of puddings for a change of pace.
