    graham cracker crust:
    3/4 cup graham cracker crumbs
    3 tablespoons reduced-calorie margarine, melted
    2 tablespoons sugar
    1/4 teaspoon egg whites

    Combine crumbs, margarine, sugar and egg whites. Press evenly into bottom of cake pan or mold. Bake at 350 degrees for 8 minutes and then

    cheesecake filling:
    8 ounces low-fat cream cheese
    1 (14-ounce) can fat-free sweetened condensed milk
    1/4 cup lemon juice
    1 teaspoon vanilla extract

    In a mixing bowl, beat the cream cheese until it is fluffy. Gradually beat in the sweetened condensed milk until smooth and light. Add lemon juice and vanilla. Pour into graham cracker-lined cake pan and bake at 325 degrees for 20 minutes. Chill until firm.

    garnish:
    writing chocolate
    raspberry sauce
    fresh raspberries
    fresh mint leaves
    powdered sugar

    Assembly: Unmold the cheesecake. Garnish plate with writing chocolate, raspberry sauce, raspberries and fresh mint leaves. Sprinkle the top of the cheesecake with powdered sugar.
