4 ea tortillas
1/2 c lean meat, chopped (optional)*
2 ea green peppers, diced
1 ea zucchini, diced
1 ea onion, diced
1/2 lb grated ricotta cheese
Recipe
*Cooked turkey or chicken or lean ground beef.
Lay tortillas flat on cookie sheets.
Preheat oven to 350 degrees F.
Layer the meat (if using), peppers, zucchini, and onion on each tortilla, beginning with meat, if any. Top with cheese.
Put cookie sheets into oven and bake for 10 minutes or until cheese is bubbling.
Remove from oven and serve immediately.
This dish is well-suited to substituting any left over meat and vegetables you may have for those listed above.
