Low-Fat Exotic Chicken Salad

½ cup reduced-fat mayonnaise
2 teaspoons mustard
2 cups chopped cooked chicken
½ cup chopped celery
½ cup chopped mushrooms
¼ cup chopped green bell pepper
20-ounce can pineapple chunks in juice, drained
1 cup red seedless grapes, halved
11-ounce can mandarin oranges, drained
¼ teaspoon salt
¼ teaspoon pepper
Garnish:

1/3 cup sliced almonds, toasted
Green leafy lettuce
Croutons
Mix mayonnaise and mustard with chicken in large bowl. Add vegetables and mix well. Chill. Before serving, add fruit and mix gently. Garnish as desired. Makes 8 servings.
