Ginger-Lime Marinade

List of Ingredients
2 tsp. grated lime rind
1/2 c. fresh lime juice (roughly 2 limes)
1/4 c. honey
2 Tbsp. bottled, fresh ground ginger (I grate mine fresh)
2 Tbsp. minced green onion
1 Tbsp. low-sodium soy sauce
2 tsp. bottled minced garlic (I use a garlic press & fresh garlic)
4 6oz. fish filets (any kind, also works very well with chicken breast)
salt & pepper
cooking spray
Recipe
1. Preheat broiler
2. Combine first seven ingredients (lime rind through garlic) in a large baggie.
3. Add fish to baggie and coat filets well.
4. Place fish on broiler pan coated with aluminum foil and cooking spray. Sprinkle filets with salt & pepper.
5. Broil fish until flakes easily with a fork.
6. Garnish with fresh lime wedge.
