    1-1/2 lbs. pork cubes, fat removed
    1/2 lbs. beef cubes, fat removed
    1/4 C onion, chopped
    2 cloves garlic, chopped
    1/2 t ground coriander
    1/4 t marjoram
    1/2 t ground nutmeg
    1/2 t ground mustard
    1/4 t ground celery seed
    1 t paprika
    1 t ground white pepper (or black)
    1/8 t cayenne (optional)
    1 egg white
    1 t sugar (optional)
    1 t salt
    1/4 C milk
    1 t liquid smoke
    about 3 feet of sheep casings

    Recipe



    Spread meat cubes on a cookie sheet and put into freezer for 30 minutes
    Meanwhile, in a blender or food processor, make a puree of everything but the meat and casings
    Grind meat through middle blade of grinder
    Wet hands and mix puree with meat
    Run meat through grinder using same blade a second time, mix again
    Put meat on the cookie sheet and into freezer for another 30 minutes
    In barely simmering water (180°) cook the links 20 minutes
    Remove and place under running cold water, to cool
    Remove, pat dry, and refrigerate up to a week, or freeze
    These can be grilled or fried like regular hot dogs
    These are some work, but fun to make, and tasty, braggin rights included
