1 pound ground beef
1/2 small onion, diced
17 ounce can cream style corn
4 medium potatoes, peeled and cut in 1 inch cubes
Place ground beef in chunks on the bottom of a 2 quart casserole dish. Season with salt and pepper. Add onion. Layer potatoes over meat. Season with salt. Pour corn over potatoes. Dot with pats of butter. Bake in microwave about 25 minutes, stirring gently once or twice. Serves 4.
