Portobello Stuffed London Broil

1 large London Broil
1 large onion
1 large portobello mushroom
1/4 cup sundried tomatoes
pinch of sugar
handful of fresh basil leaves
salt and pepper
twine for tying
Recipe
Butterfly London Broil for stuffing. If London Broil is more than an inch thick, pound it slightly with mallet to speed up cooking time. Generously season meat with salt and pepper, both inside and out. Thinly slice onion, mushroom, sundried tomatoes and basil leaves. Put onions in non-stick saute pan on burner. When onions begin to turn translucent, add pinch of sugar and sliced portobello mushroom. Sauté until vegetables are soft. Add sundried tomatoes and basil leaves until just heated through. Open butterflied London Broil and spoon vegetable mixture inside the pocket. Fold meat back over the stuffing and use twine to tightly tie stuffed London Broil closed. Place meat on grill and cook over medium heat with hood closed for 15 to 25 minutes, turning once halfway through cooking time. Let the meat stand for 5 minutes, then slice into rounds for serving.
