    4 - 5 lb Chuck Tenders
    2 tbsp bacon grease or cooking oil
    1/4 c flour
    1/2 lb cranberries
    1 c water
    1 c sugar
    1 lg. onion, diced
    2 cinnamon sticks
    1/2 c red wine (Cabernet Sauvignon)
    1 1/2 c beef broth
    3 tbsp horseradish

    Recipe



    Brown the Chuck Tenders using bacon grease or cooking oil over medium heat. Pour off fat and combine with equal amounts of flour. Reserve for later use. Combine cranberries, water, sugar and bring to a boil and simmer 10 minutes. Stir in the rest of the ingredients and pour over Chuck Tenders. Simmer 3-4 hours at 350° until tender. Strain liquid and combine with reserved fat and flour. Heat gently until sauce thickens. Serve with Roast.
