Steak Dijonaise with Shiitake Mushrooms

(yield. 2 servings)
2 Sirloin or Tenderloin 6 oz. 1/4" thick
1 oz. Dijon Mustard
2 oz. Shallots small dice
1 oz. Clarified Butter or Olive Oil
4 oz. Heavy Cream
1 oz. Whole Butter
1/4 cup Shiitake Mushrooms, sliced
To Taste Salt & Pepper
To Taste Fresh Tarragon
Recipe
Sear the meat in hot oil or clarified butter. Remove from pan, hold in warm place. Sauté the shallots and mushrooms until tender. Add the cream and reduce by half. Add the mustard, tarragon, salt, and pepper. Finish sauce with whole butter. Serve the steaks with the sauce.
