Veal Cutlets with Mushrooms & Tomatoes

1 pound veal cutlets
1 tablespoon all purpose flour
1/2 teaspoon salt
1/2 teaspoon ground pepper
1 teaspoon olive oil
1/2 pound white mushrooms, sliced
1 clove garlic, minced
1/3 cup dry white wine
2 ripe tomatoes, sliced
1/2 cup low-sodium chicken broth
2 tablespoons minced fresh basil or 1 1/2 teaspoons dried
1 teaspoon butter
Recipe
Dredge the veal cutlets in the flour, salt, pepper, saute in the oil about 2 min. on each side, transfer to oven proof dish to keep warm.
Spray same skillet with nonstick spray, add mushrooms, garlic & salt & pepper, saute, stirring often until golden brown, add the wine & cook until liquid evaporates, about 3 min. Stir in the tomatoes, broth & basil, simmer until slightly thickened, swirl in the butter until blended, return the cutlets to the skillet & simmer until just heated through.
