    1892 Rhinebeck Meatloaf

    3 pounds ground beef, pork and veal combination(amounts to suit your family)
    1/2 teaspoon black pepper
    1 Tablespoon salt
    1/3 cup chopped peppers (green)
    1/4 cup chopped onions
    2 beaten eggs
    1 cup grated bread crumbs
    2 slices of bread(grated to roll meat in)
    butter to dot top of meatloaf with
    paprika
    1 1/2 or more cans of stewed tomatoes

    Mix meat, then add pepper and salt. Add chopped pepper and onions and mix well. Add beaten eggs and the cup of bread crumbs.

    Form meat into a roll and carefully roll the meatloaf in the 2 slices of grated bread crumbs. Place meatloaf into a greased pan, dot with butter and sprinkle paprika on top. Add 1 1/2 cans of stewed tomatoes (chop tomatoes before adding them to the pan) by pouriong them around the meat.

    Bake in 350 degree F. oven for 45 minutes or until done. Occasionally check during the coooking period to see if more tomatoes should be added. Do not allow the stewed tomatoes to dry up. Add a little water if this begins to happen.

    Servings: 4-6
