7-UP Meatloaf

List of Ingredients
2 lbs. ground beef
2 eggs, slightly beaten
1 1/2 c. breadcrumbs
3/4 c. ketchup
1/2 c. 7-UP
1 envelope dry onion soup mix (I've also used onion mushroom and beef mushroom)
1 (8 oz.) can tomato sauce
Recipe
Combine all ingredients except tomato sauce in bowl; mix well. Place in a shallow baking pan and shape into a loaf. Top with tomato sauce. Bake at 350 degrees for an hour.
(I've also made it without the tomato sauce on top. Works fine and makes great leftover lunch sandwiches.)
NOTE: My Mom is a terrific cook and taught me well. But she can't make meatloaf. It was torture growing up when she served it. There were plenty of leftovers the next day for sandwiches, I always threw out the meat and just ate the bread. It was that bad.
This recipe was on a flyer handed out in my high school Home Ec. class. I figured anything would be better than Mom's Meatloaf. With her permission, I made this. My family had seconds and raved, including Mom. The making of meatloaf was deeded over to me from that time on.
