Apricot Pork Medallions

* 1 lb Pork tenderloin medallions; cut 1 " thick
* 1 tb Butter; plus
* 1 ts Butter
* 1/2 c Apricot jam
* 2 Green onions; sliced
* 1/4 ts Dried mustard
* 1 tb Cider vinegar
* Buttered noodles
Recipe
Flatten medallions slightly. Heat 1 Tablespoon of butter over Medium-High
heat in a skillet. Saute pork about 2 minutes on each side. Remove from
pan. To juice, add 1 tsp. buitter, apricot jam, green onions, mustard and
cider vinegar. Cover and simmer for 3-4 minutes. Add prok to heat through.
Serve with buttered noodles. and green salad.
