    2 tsp butter
    1 Tbsp flour
    1/2 cup dry white wine
    8 oz shredded Swiss cheese (about 2 cups)
    1 1/2 pounds beef top sirloin steak, cut into bite size pieces
    oil for deep frying
    Sauces for dipping

    Melt butter in top of double boiler over boiling waer. Remove from heat; add flour and part of wine, mixing to a smooth paste. Add remaining wine; heat over water until thickened. Add cheese; heat until melted. Keep warm. At serving time, fill a metal fondue pot half full with oil. Heat oil to 375 degrees. Cook a cube of beef in the hot oil and dip it into the cheese sauce and then into other sauces and side dishes. Horseradish sauce (sour cream and horseradish), tartar sauce, mustard sauce, chopped chives and chutney sauce are all wonderful accompaniments. These should be put in small individual dishes clustered around each place setting. Wonderful served with hot French bread and a good glass of wine.
