    Cajun Pork Chop Skillet

    4 pork boneless loin or center cut chops, 3/4 inch thick
    2 teaspoons of Cajun seasoning
    2 cups of water
    1 cup of uncooked regular long grain white rice
    One 15 ounce can of black beans, rinsed and drained
    1 cup of frozen peas

    Spray each side of pork chops with nonstick cooking spray. Rub Cajun seasoning over each side of pork. Spray a 10 inch nonstick skillet with nonstick cooking spray, heat over medium high heat. Cook pork chops in skillet until brown on both sides. Stir in the water and rice. Heat to boiling, reduce the heat. Cover and simmer about 20 minutes or until the liquid is absorbed and the rice is tender. Stir in beans and peas. Cook about 5 minutes or until hot. Garnish with tomato wedges if desired. Makes 4 servings
