    Country Ham Crab Cakes

    12 ounces of Backfin crab meat
    1/4 cup of chopped Smithfield country ham
    2 eggs, lighten beaten
    1/2 cup of softened butter, cubed
    1 small onion, finely chopped
    1/4 teaspoon of cayenne pepper
    1 1/2 tablespoon of mayonnaise
    2 cups of crumbled saltine crackers


    Clean crab meat of shell, mix well with other ingredients. Chill completely, then form into 12 patties. Saute in butter or light oil such as canola until golden brown.
