Gingerly Sauteed Pork Chops

Two 1 1/2 inch thick boneless pork chops
1 tablespoon of oil
1 teaspoon of fresh gingerroot
1/4 of water
1/4 cup of white wine
1 tablespoon of unsalted butter
2 tablespoons of fresh lemon juice
1 shallot, diced
Pat the pork dry and season with salt and pepper.
In a heated skillet over medium high heat, sauté the pork until browned, 2 minutes per side.
Transfer to a plate.
In the same skillet, sauté shallot and gingerroot for 30 seconds.
Add the pork, water, wine and lemon juice.
Simmer covered for 10 minutes.
