    Grilled Apricot Stuffed Pork Chops

    4 pork center loin chops, cut 1 inch thick
    1/2 cup of cooked brown rice or long grain rice
    1/4 cup of snipped dried apricots
    1/4 cup of finely chopped onion
    1 tablespoon of reduced calorie apricot spread
    1/4 teaspoon of dried thyme, crushed
    1/4 teaspoon of pepper
    1/4 cup of reduced calorie apricot spread

    Trim the fat from the chops. Make a pocket in each chop by cutting horizontally from the fat side almost to the bone. For stuffing, in a medium mixing bowl stir together the rice, apricots, onion, the 1 tablespoon of apricot spread, thyme, and pepper. Spoon stuffing into each pocket. If necessary, secure the opening with wooden toothpicks. In a covered grill arrange medium hot coals around a drip pan. Test for medium heat above the pan. Place chops on grill rack over drip pan. Cover and grill for 30 to 40 minutes or till chops are slightly pink in center and juices run clear, turning once. Or place the chops on a greased unheated rack of a broiler pan. Broil 4 inches from the heat for 22 to 27 minutes, turning once. Meanwhile, in a small saucepan heat the 1/4 cup of apricot spread until melted. Brush over the chops the last 5 minutes of cooking. Makes 4 servings
