    2 tablespoons butter
    4 to 8 ounces sliced mushrooms
    1 cup chopped onion
    1 cup thinly sliced celery
    1 cup shredded carrots
    2 tablespoons water
    2 pounds lean ground beef
    1/2 cup all-purpose flour
    1 1/2 teaspoons salt
    1 teaspoon seasoned salt
    1 teaspoon dried parsley flakes
    1/2 teaspoon tarragon or thyme
    2 tablespoons soy sauce

    Recipe



    In a skillet, combine butter, mushrooms, onion, celery, carrots, and water; heat to boiling.
    Reduce heat, cover, and simmer for 10 minutes, until vegetables are crisp-tender.
    Combine ground beef, flour, salt, seasoned salt, parsley, tarragon or thyme, and soy sauce in a large bowl;
    add vegetable mixture and gently mix meat loaf mixture together.
    On a greased jelly roll pan (15x10x1-inch), shape into a meat loaf about 8x6-inches.
    Bake meat loaf at 350° for 1 hour.

    Serves 6 to 8.
