Lemon Marinated Chuck Roast

4 pounds chuck roast
1 teaspoon lemon peel, grated
1/2 cup lemon juice
1/3 cup cooking oil
2 tablespoons green onion
4 teaspoons sugar
1 1/2 teaspoons salt
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
1/8 teaspoon pepper
Recipe
Score fat edges of roast. Place meat in a shallow baking dish. Combine lemon peel and juice, cooking oil, green onion, sugar, salt, Worchestershire sauce, mustard and pepper. Pour over roast. Cover and let stand 3 hours at room temperature or overnight in the refrigerator. Remove roast reserving marinade.Grill over medium-hot coals 17-20 minutes. Turn and cook 17-20 more minutes for medium-rare.
